Estimating pounds of whole poultry per person:

If you are unsure of the quantity of chicken, duck, goose, or turkey to purchase according to the number of guests you will be serving, it is always a good idea to allow for 3/4 of a pound of uncooked poultry per person when purchasing a whole bird. This is a fairly accurate quantity per person, allowing for smaller appetites as well as extra helpings for larger appetites. It is also important to keep in mind that a larger bird is a better value. Larger poultry have more meat in relation to the amount of bone and cartilage - I've tested this myself.
*MooseNote* The Muscovy has a high meat to bone ratio so a 4 pound hen should feed 4 people. Alternately, I find that a 3 pound roasted Cayuga is a very nice meal for two, though you might be able to stretch it out to feed 3 adults. However, you will find the flavor to be far superior to market Pekin.
